I know some people are so hipster and anti-everything pumpkin spice, but y’all, I am ALL about it. I love the coffee, the pie, the creamers, and just about everything that has those warm, cozy flavors of fall. In this post a few weeks back on ten of my favorite pumpkin-chocolate recipes, I shared some of my fall favorites (like these amazing pumpkin-chocolate brownies). Cinnamon and nutmeg actually combine really well with dark chocolate flavors and I’ve loved just about everything I’ve ever tasted with that combo!
The only issue? Some of these recipes take WORK. Box mix brownies are my dessert go-to because they take about 5 minutes to mix and 40 minutes to bake, so they’re an easy thing to pop in the oven when guests get here and then enjoy the gooey goodness just as we’re all finishing dinner. I knew there must be some way to make box mix brownies into pumpkin-spice deliciousness, so I set to doing some research.
After 2-3 experiments with different combos of ingredients and a little internet research about how to substitute pumpkin for eggs and oil in recipes, I am so proud to say that I have come up with my very own pumpkin spice brownies! They are the perfect combination of pumpkin, coffee, and chocolate, and you can make them in 10 minutes using a mix.
I’ve already made these several times for different gatherings with friends and the pan is always picked clean within a matter of minutes! I hope you’ll give them a try and enjoy them as much as we do. All you need are these ingredients below. And I promise you, buying this more expensive brownie mix is 100% worth it. I’m as cheap as they come and brownie mix is one thing I NEVER buy cheap (and by cheap I mean 75 cents cheaper).
Pumpkin Spice Brownies Recipe
Ingredients:
- Brownie mix (I always use Ghirardelli Double Chocolate – it is absolutely worth the extra dollar!)
- 1/2 cup + 1 tablespoon pumpkin puree
- 1/4 cup brewed coffee (or water)
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon instant espresso powder (usually in the coffee section of the store)
Instructions:
- Preheat oven to 325 degrees and coat an 8 x 8 pan with cooking spray.
- Stir brewed coffee and pumpkin in a mixing bowl until combined.
- Add dry ingredients and stir until combined.
- Bake for 39-41 minutes until a toothpick inserted in the middle comes out (relatively) clean. They will be pretty fudgy so take them out even if they don’t look 100% done! Under-baked is always better, right?
- Let cool as many minutes as you can before cutting into it or eating this deliciousness straight out of the pan with a fork!
Seriously, y’all, these pumpkin spice brownies are SO good and SO easy. They’re moist and delicious with just the right amount of chocolate, coffee, and pumpkin spice goodness. And is there any better combination than that?
